Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.

Margaret River Cabernet aromas of dark berries, chocolate and mint are evident as you nose this wine. The palate has attractive, fleshy fruit framed by ripe tannins. A lovely drink now style.

A high quality wine from the first whiff of the bouquet through to the long finish...has a tapestry of flavours from the base of Cabernet...all supported by persistent but ripe tannins, the oak absorbed by the fruit. Winning the prestigious Decanter International Trophy, we snaffled as much of this wine as we could. Very limited.
