The Shaw and Smith Lenswood Chardonnay 2021 is a fine-boned Chardonnay that reflects the conditions of the vintage and the character of this unique vineyard site. A luxurious match with kingfish ceviche.

The Gimblett Gravels Chardonnay is made using very traditional winemaking techniques involving wild yeasts and the use of French oak barriques. The resulting wine is always finely flavoured and softly textured with a linear elegance that allows the wine to retain its freshness. Lovely aromatics of white flowers, peach, biscuit and flint. Made solely from the original 1969 plantings, the Yarra Yering Chardonnay is fermented traditionally in open top fermenters and crafted to age in bottle for extended periods. The wine goes through 100% malolactic fermentation which adds complexity and roundness without foregoing natural acidity and structure. Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

Appeasing fragrances of nectarine, stonefruit, honey and lemon zest flowing from the nose mellow down to provide undertones of crème Brulee, roast nuts and citrus fruit. A fine acid backbone combines with lees-derived texture to produce a wine of depth, and complexity with an underlying minerality.
