Yarra Valley makes some of the finest wines in the world. In 2015, Four Pillars combined Rare Dry Gin with some of the best Shiraz Grapes in Australia to create Bloody Shiraz Gin for the first time. 2018 release has great depth of colour compared to previous releases. Flavour-wise it's showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.

Each bottle is individually numbered, hand labelled and produced in small batches from their small distillery in the Yarra Valley.

Four Pillars Spiced Negroni gin cuts through the Campari and vermouth in your Negroni. It uses the base Four Pillars botanicals along with extra Tasmanian pepper berry leaf and cinnamon. There is also some West African spice called Grains of Paradise, with clove and Sichuan characters. Cameron uses organic blood oranges in the botanical basket, as well as ginger.

This Premium Navy Strength Gin is carefully distilled thirteen hand selected ingredients including -caryophyllene, one of the most beneficial terpenes found in Cannabis. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Both aroma and taste are super fresh. On the nose, an aura of the Kimberleys Twin Lakes region comes to mind, scents of jilungin and wild lemongrass bringing forth a refreshing coolness reminiscent of a wetlands breeze on a hot summers day. Citrus elements of finger lime intertwine with cinnamon myrtle, awhile a heavy dose of juniper and coriander keep the spirit firmly entrenched in the traction of a truly classic gin. On the palate, exotic notes of spice interact with a deep earthiness. Hemps naturally nutty flavour interacts with native botanicals to bestow an almost hazelnut quality upon the gin, brightening up a rich fullness to the mouth feel.
