After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Greenall's Wild Berry London Dry Gin is distilled by G&J Greenall's, England's oldest gin distillers, and the first expression of the 1761 Greenall's The Original London Dry Gin. The recipe was inspired from the blackberries growing in English hedgerows. Nose: Subtle red fruit balanced with rounded juniper notes and fresh citrus flavours. Taste: Silky smooth opening that develops into rich camphor and citrus taste with underlying fruity touch. Finish: Medium length with delicate sweetness.

A savoury dry gin with peppery fragrant earthy aromas, it incorporates urban botanicals such as Juniper Berries, Coriander Seed, Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Lemon Verbena and Rosemary. Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Robust and wonderful, Claude Navy Strength gin has a hint of the Australian bush. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.

Made with fresh rhubarb picked from the farms veggie patch and we also raided a few neighbours rhubarb patches as well to make this gorgeous small batch farm crafted pink gin. It makes a refreshing pink blushed G&T with a delicate tang of Rhubarb. Serve with a splash of good tonic on ice with a fresh slice of ginger or apple.

Made each year in limited batches this seasonal gin liqueur is a refreshing drink to enjoy over summer. Best served with just a splash of soda and a slice of lemon on ice or if you like fancy it makes a wonderful French 75 cocktail.

This classic Yarra Valley Shiraz from Yeringberg is showing those trademark Shiraz characters of cracked black pepper and great fruit weight, there is also some good concentration and a long powdery tannin finish.
