The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

This is an elegant yet robust gin with an emphasis of citrus towards the end of the palate. The spirit is produced from grapes, creating a subtle natural sweetness providing balance to a juniper heavy gin. No sugar or additives are used in the production process. The use of cassia bark produces initial notes of cinnimon. We also use cubeb berries which creates a subtle spice. Garnish with rosemary and a small wedge of lemon or lime. Manly Spirits Australia Dry Gin contains a blend of sustainably foraged marine, Australian native and traditional botanicals distilled into a true Australian wheat spirit. This Gin has a lingering finish which can be enjoyed neat or used to make a traditional G&T.
