A classic and refined style with some citrus characters framed by bakery and subtle vanilla spice, the iconic Triolet is a classic Bordeaux Blanc blend, incorporating the three varieties of Sauvignon Blanc, Semillon and Muscadelle. It was first produced by Mount Mary in 1987. The varieties are fermented separately in barrel with complexity and palate weight gained from extended lees contact and fermentation on solids.

The 864 range of wines by David Bicknell at Oakridge showcase the very best vineyards at the disposal of this talented winemaker. The 864 Syrah is sourced from a vineyard that is located at the foot of the Warramate Hills at Coldstream and face due north, taking full advantage of the cool Yarra Valley sunlight. The soils are built on grey-loam alluvial with both high clay and ironstone content. This results in a Syrah that displays a bright purple colour in the glass which is followed up with aromas of ripe red fruit and subtle anise. The palate has a core of sweet Shiraz fruit showing red and black berries and a tannin structure that is both velvety and smooth.

Further testament to both vine age and the merits & complexity of this blend, which allow the wine to rise above an otherwise challenging year. Classic blackcurrant, cigar box and tapenade aromas, overlaid with notes of violet, Christmas cake and sweet spices, lead onto a supple, savoury and effortless palate that builds towards a long & lively finish.

This unfiltered Chardonnay was made at Giaconda by Rick Kinzbrunner using traditional techniques. Quite sublime buttery richness with perfect balance of acid and oak integration.

Yeringberg is one of Australia's most distinguished vineyards with a history over 150 years old. This blend of white Rhône varieties such as Marsanne Rousanne comes from vines planted mostly in 1969. Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Giant Steps is a complex Pinot Noir with terrific varietal character. The nose shows rose petal, dark cherry and tomato leaf aromas and the palate is fleshy but tight, with savoury, dusty notes and silky tannins.

Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.

Four Pillars Spiced Negroni Gin is an aromatic, rich and spicy gin with great power and intensity. First, they take the base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then the addition of an exotic West African spice called Grains of Paradise. Although powerful, the spice tends to glow rather than become hot. Beautiful organic blood oranges are one of the last additions to the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.
