A delicate citrus/floral nose of fresh lime, guava and lavender warmth, given tension from herbal tones of pink peppercorn, lemon myrtle and the unmistakable, yet light scent of wormwood. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

This wine is comparable to top-end Burgundies. A delicious Australian elderflower GiN liqueur made using handpicked elderflowers foraged from the farm's elderberry trees during spring. Infused with the distillerys award winning Elegant Dry GiN, Australian grown sugar and the farms freshly grown lemons and rain water.
