The 2008 marks the 25th anniversary of Dalwhinnie Chardonnay in the Pyrenees in western Victoria, and the wine is still not missing a beat. Representing the pinnacle of any given vintage, the Deep Woods Reserve Cabernet Sauvignon from the very low yielding original vines on the estate in the Yallingup region of Margaret River and a single growers vineyard in the Yallingup hills. The palate is layered with complex and generous varietal flavours, supported by interwoven French oak characters and a savoury complexity. This is an exceptional Cabernet that will age gracefully will careful cellaring.

The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

A concentrated dark fruit spectrum with an abundance of ripe blackcurrants, cherries and a hint of cassis. Coffee bean, dark chocolate and black olives lie beneath. Subtle dustiness combines with a seductive violet lift, enhancing the varietal fragrance and increasing complexity. A dense and layered palate with incredible texture. The generosity of the palate is carefully laced with a fine and structural acid line. Dark cherries and currants weave through smokey and mocha notes, finishing with long tactile tannins.
