Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. 2020 A mild 2020 spring with reasonable rainfall provided excellent growing conditions. A wet November followed by a warm and dry December and January set the vines for up for a regular season.However wet and humid conditions in February created an unusual vintage with extreme weather. As a result, the 2021 vintage required extra work and attention to detail in the vineyard. The final wines show incredible flavour at lower Baume’s with bright natural acidity. Great fruit purity and varietal expression.
