Chateau Canon is a 1er Grand Cru Classé estate in the St Emilion appellation on Bordeaux’s right bank. The Grand Vin Chateau Canon is a blend of 75% Merlot and 25% Cabernet Franc. After harvesting the grapes are meticulously sorted before undergoing fermentation and a two week post-ferment maceration to build tannin structure. Maturation takes place in 60% new French oak for 18 to 20 months. In the best years, Chateau Canon is deeply coloured and plush with ample mouth-coating blue and blackberry fruit.

Caiarossa is an original blend of 7 different varieties harmoniously put together to reflect the complexity of its outstanding terroir; Syrah, Cabernet Franc, Merlot and Cabernet Sauvignon make the majority of the blend. The estate is made up of a variety of vineyards (which have been managed following organic and biodynamic principles since 1998) specifically tailored according to differences in soil, altitude and exposure. Caiarossa - since 2004 - has been part of the Albada Jelgersma family, which also owns the historic Chateau Giscours in Margaux. Dense midnight black heart with a deep dark red black tinged hue. Delightful red to black currant and dark cherry aromas rise from the glass complimented by hints of liquorice, vanillin cedar, earthy tobacco characters, dried herbs and spice. Rich, amply powered and bold yet wonderfully structured, the medium to full bodied palate is engulfed with blackcurrant and dark cherry fruits that are held within a robust tannin framework. Infusions of dried herbs, earthy cedar, tobacco and spice add complexity. Finishes dry and firm with loads of red to dark fruit lingering through the long sturdy aftertaste. Cellar 6-8 years. Left in a sorry state by the previous owners, in 1962 the Rothschilds of Lafite took over the property and begun to reconstruct the vineyard which was planted mostly to Petit Verdot. 4 decades later and the wines of Château Duhart-Milon are now showing the flavour and concentration you expect from such a site in Pauillac.

Jasper Hills Emilys Paddock is mostly shiraz - with a defining splash of cabernet franc. A lot has been made over the years of the terroir difference between Jasper Hill Emilys and Georgias, but its the cabernet franc that really differentiates them. Wonderfully fragrant and lifted on the nose, Emily's Paddock is not only wonderful upon release, the wine will age gracefully over many years in the good cellar.

Pavie Macquin is a Premier Grand Cru Classe (B) growth of Saint-Émillion, planted mostly to Merlot on the regions famous limestone plateau. The Chateaux is named after Albert Macquin, the man oft-credited with much of the innovation around rootstock grafting that eventually saved the vineyards of Europe from the infestation of phylloxera. Prior to the 1998 vintage the wines are thought to not adequately reflect the potential of the terroir of the property, but in the past few decades the chateau has built an incredibly strong reputation.
