Balanced and elegant tannins, nicely integrated oak, gives the wine balance and structure. Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. The pinot noir grape variety seems to be well suited to the cool climate environment of the Denmark sub-region of the Great Southern. The pinot noir fruit from Robertsons vineyard typically displays floral and perfumed characters with an underlying dense cherry and raspberry fruit profile followed by a subtle savoury finish. The Wine is a fuller styled pinot with perfumed aromas of red raspberries, cherries, subtle earthiness and spice. These characters follow through on the palate with a medium weight and textured mouth feel with soft tannins and a long finish. This wine is well suited to complement red meat dishes especially duck. Drink now or allow this to continue to develop in the bottle for up to 7 years.

this firmly structured wine bears the hallmarks of true cool climate Cabernet. Richly flavoured palate with integrated oak and fruit tannins a solid core of blackberry fruit is overlain and enhanced with a sprinkling of chocolate and coffee. Cellaring for 8 years plus will develop complexity.

Hand Picked- Matured for 18 months in French oak (50%new). Brilliant crinmson-purple; a very complex wine on the bouquet and medium to full-bodied palate alike; the new oak certainly plays role, but it's the spice black fruit and fine tannins that build the perfect platform for a wine with avery long future.

Still very youthful, the quality French oak riding high in the saddle. This is a wine of excellent quality, ticking every box. Its texture and balance are admirable, the varietal character likewise.

Garnet in colour with a lively bouquet of black and red fruits with subtle spice, musk and hibiscus notes. The palate is fleshy and mouthfilling with Satsuma plum, mulberry, boysenberry fruit flavours plus Hoisin sauce notes and sweet spice flavours. 15% wholebunch fermentation adds wild depth of flavour and pleasant chewy tannins; balanced by refreshing natural acidity and fine-grained oak texture.
