Simply one of this country's greatest Cabernets, this wine is not just single vineyard fruit, the selection process is so rigorous that often it is just a few rows from the Justin Vineyard. Such is the reverence for that great man - Jack Mann.

In the glass: Medium to deep red black. On the nose: Full of bright red cherry with hints of red olive and fine oak spice. On the palate: Quite a jubey and appealing red fruit core giving long and silken flavours that are generous and classy. Fine oak gives subtle support throughout. Lovely now yet with good mid-term potential.

Aromas of bright boysenberry, blood plums and liquorice. Classy oak adds mocha and spice to palate that's bursting with luscious fruit. Medium bodied with soft tannins and a lingering finish.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The wine gives mid-palate fruit with liquorice, small red berries and a hint of dark chocolate. Balanced and elegant tannins, nicely integrated oak, gives the wine balance and structure. Balanced and elegant tannins, nicely integrated oak, gives the wine balance and structure. Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. A well structured wine showing a refined, linear palate with ample fleshiness of bramble fruit, subtle pepper and toast with well integrated chewy tannins leading to a long finish.

Flavours of red cherries, mulberries and liquorice. Fine tannins fill the palate to give a long savoury finish.

Bouquet of dark forest fruits, strawberries, some spice and fragrant tea smoke. The palate highlights are Cranberry freshness with the succulence of softer fleshy fruits and subtle sweet oak. Well integrated, silky tannins support a lingering opulence which is tempered by a freshening minerality on the finish.

This Grenache is finely structured and will age beautifully, yet the overall balance, waves of fruit purity and savoury complexity mean this wine is a delight from the get-go.
