Destemmed and tipped into a tonne fermenter. Gentle pump over and slow extraction until full dryness. Only the free run was placed into a 3 year old French oak barrel. Soft palate with extremely precise and thin tannins that caress and carry on the freshness and intensity.

Henschke Mount Edelstone is one of the most important single vineyard sites in Australia. The 90 year old vines has been producing a single vineyard Shiraz since 1952 and is one of Australia's truly great wines. The nose has sweet ripe plum and blueberry aromas and the palate is intense and deeply flavoured. While enjoyable upon release, this is a wine that will enjoy a decade or more in the cellar.

Concentration is the key word for this wine. Super ripe fruit, dense and rich, matured for an extended time in toasty new oak. Complex, vibrant aromas of violets, plums, blackberries and cassis with dried rosemary, thyme and oregano nuances, and a hint of beef stock, cedar and star anise spice. The palate is powerful yet incredibly finely structured with layers of plums, blackberries and red currants, guided by elegant acidity and tannins that integrate with the fruit and lead to a long, fine, beguiling finish. 100% 88-year-old-vine shiraz grown in the Eden Valley wine region. Sweet and spicy with developed earthy, gamey hints and blackberry, plum, anise aromas, subtle vanilla notes and ferny hints.
