Nestled away in the far north of Scotland's Highland region is the distillery of Clynelish. Situated at Brora on the stormy North East coast, this 14 Year Old single malt has been matured in specially selected oak casks and then bottled at the full 46%. Displaying a waxy nose with a hint of sugar and florals, the whisky arrives on the palate with power and flavours of signature spice and maritime saltiness.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying their barrels for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the frigid winters and using specific filtration types for each whiskey they make.
