Our bespoke gin is made from scratch in small batches in Tasmania. Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown and internationally sourced botanicals. Layered notes of green cardamom, fresh lime and lemon, juniper (organic), coriander, a hint of white peppercorn and three cuts of rose makes our gin ideal for creating your favourite cocktail or sipping slowly over ice.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

This unique dry-style gin is distilled with juniper and contains a small core of our silver spirit. Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours. First Impression Gin is smooth, well balanced and unlike some other gins, crafted to be enjoyed neat or on the rocks. 42%ABV.

The limited edition, Dasher + Fisher Strawberry Gin is a sumptuous fresh strawberry gin with floral spice undertones that is delicious over ice or in a cocktail.

“I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out. The gin is gluten free, vegan and unfiltered. Try a summer gin with good tonic, fresh chilies and thyme!”

Apothecary Gin is produced using 10 different botanicals that are each individually distilled in a small copper pot still then married together to create the perfectly balanced dry style Tasmanian gin. This gives grater control and consistency over each botanical and each batch. The main botanicals are juniper, coriander, several different types of citrus and some native Australian botanicals.The Apothecary Gin itself is well balanced with hints of juniper and citrus, full mouth coverage and crisp clean finish. It is fantastic on its own and also goes well in a classic GnT, negroni, martini etc. I love it with a dash of ruby grapefruit juice over ice.Best mixed with Capi dry tonic or East Imperial Old World Tonic. Garnish with a slice of dried ruby grapefruit or slices of strawberry.

Our Gin produces an aromatic and subtle peppery taste, smooth on the pallet and perfectly balanced when served with a twist of lemon or lime.
