These grapes were grown using Biodynamic practices and are Certified with the ACO. The wine was fermented naturally using wild yeast living in the vineyard. The wine was basket pressed and matured in small oak barrels for 12 months. The wine exhibits a ripe berry bouquet with a hint of white pepper on the palate. This wine will become well integrated and more complex with extended cellaring.

This hand crafter natural wine is created from Certified Organic/Biodynamic Shiraz grapes. The grapes were picked at ultimate ripeness to encapsulate the delicate flavours and crisp acidity. After whole bunch basket press to minimise skin contact the juice was cool fermented resulting in the beautiful light salmon hue. 2022 was a wet season in the Hunter region with over 180 millimetres ofrain in February alone. Mild weather and cooler conditions delayed harvestuntil the sun and welcoming winds dried out the vineyards. All was not lost,as the longer season introduced excellent flavours, natural acids and complexity into the wines. This single vineyard wine produced by Cael's Gate was made from vinesplanted in 1971. This wine is delicately expressed on the nose showingraspberry, red apple, lemon peel and white floral aromas. This is followedby a finely textured palate displaying juicy fruit flavours and backed bybright acidity.

This Shiraz Pinot red blend from the Hunter Valley was made from hand harvested grapes, and then whole berry fermented without stalks. The fruit flavours have been enhanced by gentle winemaking techniques. Aged for just 3 months in old French oak, this results in a medium bodied wine with flavours of mulberries, plums and cherries, and soft sweet tannins.
