Speakeasy 500ml Whisky Whisky: Distilleries began producing whisky in the late 18th century. The spelling of the term ‘Whisky’ alters by country, Scottish, English, Welsh, and Canadian whiskies use ‘Whisky’, while the Irish use ‘Whiskey’. Scottish Whisky must be aged in oak barrels for a minimum of three years, where it is known as the ‘spirit of the Gods’. This might explain the ‘Angel’s Tax’, used to describe the amount of whisky lost each year to evaporation during the ageing process. They must be happy little Angels over Scotland. With more than 30 bottles of whisky exported from Scotland each second, there’s clearly enough left over for the rest of us whisky lovers. A 100% rye made in Brunswick, Melbourne from all-Australian grain grown in the Mallee. Following double distillation the whisky is matured in a two-storey tall bespoke solera system composed of new American oak and x Australian wine barrels.

Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. The Honour of NED is the latest release from The Wanted Series, a super premium range of Australian whiskies from the NED Barrel House. NED fought to reclaim his honour in a bare-knuckled boxing match at the Imperial Hotel in Beechworth VIC. After 20 Rounds, Kelly walked away victorious. The Honour of NED begins with a rich orange and caramel scents, moving into oak, raisins and vanilla. The taste is a sweet and rich oak with plenty of power and length. With hints of chocolate, orange peel and vanilla toasted moving into sweet Christmas cake. It has a great balance with a pleasant smooth heat. Awards The judges said, “Good nuttiness on the nose, rich oakiness and cacao characters. Great mix of flavours in perfect harmony. Great job!” About The Design The illustration is an interpretation of NED reclaiming his honour against Isaiah Wright. NED fought a bare-knuckled boxing match at the Imperial Hotel that lasted 20 Rounds. A horse shoe to symbolise the horse they were fighting over. 1874 was the year it took place in Beechworth. Boxing bell and boxing ring ropes give subtle nod to the boxing history. Tasting Notes Sweet, rich oak, with lots of power and length.
