Great job!” About The Design The illustration is an interpretation of NED reclaiming his honour against Isaiah Wright. NED fought a bare-knuckled boxing match at the Imperial Hotel that lasted 20 Rounds. A horse shoe to symbolise the horse they were fighting over. 1874 was the year it took place in Beechworth. Boxing bell and boxing ring ropes give subtle nod to the boxing history. Tasting Notes Sweet, rich oak, with lots of power and length. Inspired by the ingenuity of Ned Kelly, our Master Distillers enhanced the flavour profile of this whisky by hand-selecting barrels with flavours of soft vanilla, milk chocolate and citrus fruit before maturing the whisky over char toasted wooden blocks. This unique approach makes Ingenuity our most bold and balanced whisky of the series. Ingenuity of NED has a fragrance of dried fruit, fresh oak and citrus. The taste is rich vanilla, toffee and sweet milk chocolate with silky tannin. It is a balanced mouthfeel with a subtle pepper spice finish.

Scottish Whisky must be aged in oak barrels for a minimum of three years, where it is known as the ‘spirit of the Gods’. This might explain the ‘Angel’s Tax’, used to describe the amount of whisky lost each year to evaporation during the ageing process. They must be happy little Angels over Scotland. With more than 30 bottles of whisky exported from Scotland each second, there’s clearly enough left over for the rest of us whisky lovers. The DARING of NED is a release from The Wanted Series, a premium range of Australian whiskies from the NED Barrel House. This release is powerful and complex, with intense fruitcake, caramel and dark chocolate, while oak gives a long, clean finish. DARING has been blended from four exceptional barrels by NED’s Master and Head Distillers. The barrels, comprising two from NED’s Heritage 200-litre collection and two from a special stash of 500-litre European oak, were matured separately and then expertly blended to deliver a premium Australian Whisky of strength and complexity. The DARING of NED received a SILVER medal at the 2021 Australian Distilled Spirits Awards. The judges said, “Complex and well structured palate. Long, spicy finish. Great balance of flavours, and very well put together. Easy drinking.”

An extremely limited release of NED Whisky drawn from a single barrel which had been seasoned with Shiraz Wine. We secured a Shiraz Wine barrel from our friends at Mount Langi Ghiran Vineyard in Victoria. We filled it with a carefully selected barrel of our premium NED Whisky that was rich and bold in caramel and vanilla, with a soft finish and mellow profile to help balance out any tannins. This whisky captures the glorious fruit and weight of Victorian Shiraz and we believe this to be our smoothest and richest NED Whisky released to date. With less than 450 bottles of our Single Barrel Shiraz Finish, this is one of our smallest releases of whisky to date. Each bottle is individually numbered. TASTING NOTES: Aroma: Vibrant fruit, raspberry and caramel. Taste: Fine oak, dried spice and strawberry. Finish: A long soft finish of mellow oak and smooth shiraz.

Gin derives its predominant flavour from juniper berries (which are full of antioxidants) with perfectly balanced botanicals – so we think this is just the tonic for those who need a rejuvenating drink at the end of a busy day. Serving Suggestions: To serve, fill two tumblers with ice, fill glasses evenly with Dr Onyx Just Gin, top with a quality tonic water (we recommend Fever Tree) and a squeeze of fresh lime, dropping the lime into the glass. Speakeasy 500ml Dry Martini Dry Martini: Ernest Hemingway described the Martini best “I’ve never tasted anything so cool and clean…They make me feel civilised”. It was James Bond’s drink of choice where the catchphrase “shaken, not stirred” was introduced in Diamonds Are Forever (1956), and then incorrectly referred to as “stirred, not shaken” in You Only Live Twice (1967), to Bond’s response “Perfect”. The Martini rose to prominence during the 1950s and 60s when the ‘three-martini lunch’ was widespread. Whilst the stance on workplace drinking might have changed, our affection for the Martini hasn’t. An excellent tonic for those wanting to step back to a more sophisticated time. Serving Suggestions: To serve, pour Dr Onyx Dry Martini into a mixing glass filled with ice. Stir, and strain into a chilled martini glass.
