With age, the wine will become progressively richer, revealing warmer, more complex flavours, riper berries and a little liquorice.

Bastioni Della Rocca Leggero Appassimento
This affordable red immediately caught out attention having been rated 98 points by Italian wine critic Luca Maroni. The word appassimento is Italian for "withering" and refers to a method of wine production in which grapes are dried for several weeks after harvest in special storage racks. The liquid evaporates and the aromas intensify with the concentrated fruit. A blend of Negroamaro (80%) and Primitivo (20%). Ruby red with orange reflections. Intense and complex with notes of ripe fruit and spices. Dry wine with good texture and supple tannins. Perfect with spicy pasta, red meat and mature cheeses.
De'Conti Appassimento 100X100
Produced almost exclusively in the southern region of Puglia, Italy, Appassimento is a the process of drying out the grapes whilst still on the vine. This tradition was historically used in the Veneto region in the production of Amarone, and goes back many centuries With this, lovely Primitivo and Negroamaro fruit, are naturally dried on the vine for 25 days, allowing a higher concentration of sugar and lets the water out, combined with a long period of cement age to create a supple wine full of ripe black fruits with complex hints of spice, vanilla, and raisins. De'Conti Appassimento 100X100 is a strong but fruity red with with a soft and almost sweet tannic structure. To obtain a well balanced wine, they have added Apulian Negroamaro and Sangiovese fruit.
Sidewood Shiraz
Tucked away nicely in the Adelaide Hills, Sidewood Estate have made an art form out of crafting some of the very best single vineyard cool-climate wines available in Australia. Owen and Cassandra Inglis purchased the boutique property in 2004 and immediately set about making their vision become a reality. Their Sidewood Shiraz displays that vision to perfection. Attention to detail is the key here which enables flavours of red cherry, currants and dark plum to shine through along with hints of cinnamon and spice. The texture is beguiling and gives promise to a wine that will age for up to a decade.
