Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.

Our own interpretation of an old style of gin popular in the 18th century, when strict licensing made it difficult to make and sell gin. Slingsby Gooseberry gin is crafted using the world-famous Harrogate aquifer water, pure single grain spirit and locally sourced botanicals synonymous with the restorative nature of the town. Yorkshire gooseberries bring an unmistakable tangy sharpness, tempered with a fruity sweetness whilst retaining the classic citrus notes of our classic award-winning London Dry Gin.

Our Navy Strength Gin uses the same botanical mix as our classic London Dry Gin including Primrose, sweet cicely, nettle, rhubarb, milk thistle, rose-hip and Taylors of Harrogate green and jasmine tea, however is stronger and richer with an ABV of 57%. This creates a great body and intensity whilst still retaining our classically smooth finish. This gin continues the tradition of the Royal Navy’s ‘proof test’, whereby gunpowder can still ignite if gin is accidentally spilled upon it.
