Our 2010 Cabernet Sauvignon has an intense crimson colour. The nose reveals aromas of mixed spices, dark fruits, and toasty French oak. The palate is deep and powerful; showing a ripe spectrum of red to dark fruits combined with star anise, clove, and allspice. The finish is incredibly long, with firm but fine tannins. We consider our 2010 vintage to be the most complete and complex Cabernet Sauvignon produced at Woodlands.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. Balanced and elegant tannins, nicely integrated oak, gives the wine balance and structure. Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. Hand Picked- Matured for 18 months in French oak (50%new). Brilliant crinmson-purple; a very complex wine on the bouquet and medium to full-bodied palate alike; the new oak certainly plays role, but it's the spice black fruit and fine tannins that build the perfect platform for a wine with avery long future.

Still very youthful, the quality French oak riding high in the saddle. This is a wine of excellent quality, ticking every box. Its texture and balance are admirable, the varietal character likewise.
