House of Arras Grand Vintage is at the pinnacle of Australian sparkling wine! The fruit is sourced from the cool climate region of Tasmania where Ed Carr (Gourmet Wine Traveller Winemaker of the Year 2011) and his team produce an outstanding wine of incredible complexity and character resulting from extended maturation on yeast lees.

Defying those who deemed it impossible, the Mt. Lord Vineyard site lies on a steep slope high up facing east, overlooking the Coal River Valley. The combination of low yielding, multiclonal blocks and our small batch winemaking philosophy, using the finest of French oak barriques, challenge and excite us each harvest.

House of Arras was born of an ambition to create world class sparkling wines that showcases both winemaker and region. Ed Carr's House of Arras Rosé marries exceptional cold climate Tasmanian vineyards and uncompromising sparkling winemaking techniques mastered over decades. A sophisticated rosé style with an exceptional balance of red fruits and the complexity of extended age. Intense flavour and structure, with an excellent natural acidity, this is the prime example of why Ed Carr is considered Australia's greatest sparkling wine maker.

Widely regarded as one of Australia's benchmark fortified wines, the Penfolds Grandfather Rare Tawny rightfully lays claim to such a title. High quality blending stock has been lovingly matured in small oak casks, and creates a wine of immense complexity and depth.

Veuve Clicquot is widely regarded as one of the great Champagne houses. A pioneer in Champagne, Madame Clicquot's legacy can still be tasted in every bottle of Veuve. The Vintage by Veuve is a typically generous and full-bodied style of Champagne with all the toastiness and notes of brioche lover of Veuve have come to expect.

Symphony No. 1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky thats full of life from start to finish and carries the uncompromised signature of Lark Whiskya Tasmanian icon.

The Brut Vintage displays a bright yellow-gold colour enhanced by a continuous thread of lingering bubbles. The nose, instantly elegant, exudes delicate scents of citrus fruit (tangerine) announcing a beautiful freshness. Later it reveals an outstanding aromatic complexity with hints of peaches, apricots and almonds. The palate first reveals a very creamy and full-bodied texture. The immediate impression of freshness gives way to an unctuous and well-balanced structure offering aromas of fresh biscuits and ripe fruit (apricots). This is a rich champagne of strong character, with vinosity, keeping nevertheless all its elegance and delicacy, it is the very soul of Pol Roger.

Penfolds St Henri is one of Australia's greatest red wines. The Shiraz for St Henri is selected for subtlety and elegance and the finished wine has the structure complexity for extended bottle maturation. The 1991 is a classic St Henri vintage that is good to drink until 2022.

The guiding principles of blending are the achievement of harmony and consistency. The White Foil blend is traditionally composed from around 80 still base wines, drawn from different vineyard sites (crus), grape varieties and vintage years. The blend contains approximately one third of each three grape varieties of Champagne. Pinot Noir contributes body, depth of character and life extending tannins, Pinot Meunier adds youthful freshness, vigour and plump fruit character while Chardonnay gibes lightness, elegance and firmness.
