The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.

Pooley Butchers Hill Oronsay Pinot Noir

The Pooley's planted their first vineyards over 35 years ago in the Coal River Valley of southern Tasmania. In 2013, after working in some of the best wineries around the world, Anna Pooley became the 3rd Generation winemaker of the family business, propelling the estate to critical acclaim. Their vineyards are set on excellent sites that receive very long sunlight hours for optimum ripening while producing fruit with finesse thanks to the close proximity to the cool Tasman Sea. The Butcher’s Hill ‘Oronsay’ Pinot Noir is produced from 20-year-old vines (MV6 clone) on a north-facing slope at 30-100m above sea level. Following a 100% whole bunch fermentation of 21 days, the fruit was pressed to French oak barriques, 40% being new barrels, for 14 months of elevage. Expect a lively acid profile with chalky yet ripened tannin, pronounced weight, aromas of wild cherry, and an underlying savoury character.

Taittinger Brut Reserve Non-Vintage Champagne

The Taittinger Champagne house in Rheims was founded in 1734, and this recent, fine-bubbled descendant echoes that distinguished history. The brilliant body is golden yellow in colour. The bubbles are fine, while the foam is discreet yet lingering. The nose, very open and expressive, delivers aromas of fruit and brioche. It also gives off the fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. The entry onto the palate is lively, fresh and in total harmony. This is a delicate wine with flavours of fresh fruit and honey. Taittinger Brut Réserve, which acquires its maturity during three and four years ageing in the cellar, offers excellent aromatic potential.

Ferrari Perle

The best Chardonnay from the family’s vineyards is used to make this vintage Trentodoc; it is the wine that best summarizes the art of Ferrari. The phrasing of its taste is highly elegant, with a crescendoing finish. Pale golden highlights adorn its straw yellow colour. The perlage is extremely fine and persistent. Aromatic richness of extraordinary expressiveness: the scene is dominated by hints of Reinette apples and citrus fruits, accompanied by tones of white peach, almond blossom and toast-like notes. Elegant and harmonious, with the unmistakable fruity, aromatic sensations that are typical of Chardonnay. These are followed by a slightly almondy finish of great persistence, the result of long ageing on the yeasts.
