Pol Roger Brut Reserve Non-Vintage
Pol Roger Brut displays a beautiful golden straw coloured hue, as well as abundant and fine bubbles. With a powerful and attractive nose, it first delivers aromas of fruit (pear and mango) and then releases light flavours of honeysuckle and white jasmine, lingering on vanilla and brioche notes. Behind a frank and dynamic attack, the wine encompasses a nice harmony and a pleasant freshness, whilst preserving some structure. On the palate, flavours of cooked fruit (quince jelly, apricot jam) happily mingle with fragrances of beeswax and acacia honey. The long-lasting aromas, composed of both fruity (candied orange peel, tangerine) and spicy notes (cardamom, anis) is outstanding.
Pommery Grand Vintage Champagne
Only fruit from 7 Grand Cru vineyards is used to craft a blend of equal parts Pinot Noir and Chardonnay, which spends over 4 years ageing on lees plus 6 months post disgorgement. Further gentle ageing takes place until deemed ready for release by the Cellar Master. It displays mature citrus characters, fresh white and red fruits and gentle spice, all linked by a common thread of minerality producing complexity, elegance and length.

Pierre Gimonnet & Fils Cuis Blanc de Blancs Non-Vintage
Hartshorn Gin Sheep Whey
The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.
Pierre Gimonnet & Fils Fleuron Blanc de Blancs
Grand Crus, especially Cramant and Chouilly are always dominant in this blend, but anyway, Cuis 1er cru is always essential to sign the fresh and delicate "Pierre Gimonnet & Fils' style". A great wine is a balanced wine between structure, fruit, elegance and finesse, freshness and minerality. The champagnes of Pierre Gimonnet & Fils are intricately assembled by masterful hands exclusively from enviably positioned and painstakingly tended old vines. Every cuvee sings its aspiration of 'precision, purity and minerality', each speaking articulately of its place in the northern Côte des Blancs through expressive, chalky minerality, without one molecule of detailout of place. With high-strung tension, crystalline structure and rapier-sharp precision, these are blanc de blancs champagnes charged with an energy that will sustain them long indeed. They represent some of the best-value apéritif champagnes of all. The Champagne Guide 2016-2017, Tyson Stelzer www.tysonstelzer.com
Laurent-Perrier Cuvee Rose Non-Vintage
Elegant, with colour changing naturally from a pretty raspberry hue to salmon-pink. A precise nose of extraordinary freshness and a wide range of red fruits: raspberry, redcurrant, strawberry, black cherry. A fresh and sharp attack for this supple and rounded wine. On the palate, it offers the sensation of plunging into a basket of freshly picked red berries. Pinot Noir from 10 different crus located mainly in the South and North areas of the Montagne de Reims including the famous Côte de Bouzy. Notably from the finest crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne. The grapes from carefully selected plots are sorted and destemmed before vatting. The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.
Laurent-Perrier Millésimé

A lively a wine of great depth and persistent freshness that gives way to notes of bitter orange and lemon on the finish. Serving temperature: between 9°c and 11°c.
