Vino Intrepido Cold Fusion Prosecco
Col Fondo is the term used for bottle fermented Prosecco that is not disgorged. The term means ‘on the bottom’, referring to the lees sediment in the bottle that the wine continues to develop on Cold Fusion is a theoretical type of nuclear reaction that occurs at or near room temperature. Much like cold fusion, the grape name prosecco is contentious, as in Italy they expanded the geographic protected borders to include the town it takes its name from and changed the name to Glera.

Mojo In Full Colour Prosecco Non-Vintage
South Australia's first vineyards were established in the 1830's. Enjoying a wide range of climates including the cool temperatures of the Adelaide Hills, to the hot summer weather of the Barossa Valley, South Australia is arguably Australia's most diverse wine producing state. It is from these wonderfully diverse regions that winemaker Marty O'Flaherty selects the best varietals to produce Mojo wines. Marty's resounding philosophy is "wine should tell a story about the terroir in which it's grown, needing lots of love but minimal handling by allowing the growers to do what they do best." Mojo In Full Colour Prosecco is appealing and approachable with aromas of fresh cut crunchy green apple and zingy but creamy lemon-lime highlights, think lemon meringue and fresh strawberries. The palate is soft and approachable with a mouth filling freshness balanced with brilliant crisp acidity. As a stand-alone, prosecco is always fantastic to kick things off, but you can never go wrong pairing with fresh eats, great with charcuterrie dishes like prosciutto with fresh rockmelon.
St Johns Wine Crush Prosecco

A cleverly fashioned, well-balanced sparkling wine which both sweet and dry wine drinkers will enjoy. Winemaking: This wine is made from 100% Prosecco grape variety. Once fermented, a tirage is added, and a second fermentation takes place in a pressurized tank. Bubbles are naturally formed and captured to produce a fine sparkling wine.

Maschio's Valdobbiadene Prosecco Superiore is produced in the Valdobbiadene district of Italy. The wine is a straw yellow colour with green glints followed by an intense and fragrant nose with hints of candied citron and acacia flowers. The taste is fresh and charming with a fruity note. This Prosecco excellent as an aperitif and is ideal with light fish dishes, pastries and cakes.

Zonzo Estate Prosecco di Aria
When you need to add a bit of bubbles.Pale green in colour with aromas of freshly cut fruit salad. On the lips you get a balance of mild citrus tang and fruity sweetness. Michelini Prosecco Non-Vintage
A fun Italian style sparkling with a burst of citrus acidity and a dry finish. Made using the traditional method, bottle fermented for full flavour. This is the same method used for Champagne.
