Grapes are picked on both colour and flavour development. Picked at night to enable a cold onset to fermentation. Once crushed they are then fermented for 7-10 days at around 20 degrees, in small batches using neutral yeast, to allow regional fruit expression.The ferment is then pressed using an airbag press. A soft pressing is used, so we do not extract the bitter tannin, producing a fruit driven style of wine. After we have pressed the wine, it is allowed to go through natural malolactic fermentation. Following maturation the wine is blended and prepared for bottling.Dark plum with crimson highlights lifted aromas of blackberry, mocha and spiceLuscious red berry fruits complemented by mocha and subtle oak leading to a generous and well-structured palate. Church Block first appeared back in 1972 under the watchful eye of Greg Trott and was taken by one of the original vineyards that ran alongside the small Bethany Church, across the road from Wirra Wirra's old ironstone cellars. Over the last 4 decades, it has become one of Australia's favourites. The 2005 Church Block is showing just what a little patience can do. After six years, the velvet texture is the dominant feature with integrated tannin taking a backseat.
