Levantine Hill Melange Traditionnel Blanc
Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.
De Bortoli Premium Traminer Riesling
One of the hard part of winemaking process is blending. Each of the variety had to shine yet not overpowering others in the same blend. In particular this case, the Traminer and Riesling are both delicate and aromatic variety. De Bortoli has found that balance in this fruit driven medium dry white. Resulting with a wine that displays musk stick and mango on the nose and a clean finish.
Château Haut-Brion Pessac-Léognan Blanc
Château Haut-Brion was the one and only estate outside of the Médoc and Sauternes to be bestowed 1st Growth status in the original classification of 1855. That reputation and standing has withstood over 150 years and can be tasted in what can only be described as 'blockbuster' white wine. A blend of 62% Sauvignon Blanc and 38% Semillon, this wine should be held up as the flag-bearer for all Bordeaux Blancs. Mind blowing texture is the trademark of 2009 along with superb flavours and aromas of lemon scented cream, orange skin and a touch of lanolin. The ageing propensity of this wine is not be underestimated and will last in a good cellar for at least 30 years.
Domaine de Chevalier Blanc Pessac-Léognan
Domaine de Chevalier uses traditional methods when making their flavoursome white blend of Sauvignon Blanc and Semillon. Fermentation occurs in oak casks and is then aged for 18th in oak, some of which is new. This practice was abandoned by many in Graves, only to be (rightfully) regenerated to allow wines of substance and character to be produced once again. Chevalier's Blanc is a wine that is taut and restrained that opens up over a six to eight year period to reveal a wine of supreme delicacy.

Les Enfants Koshu Shiro 2015 is light with a soft aroma of pear and freshness of lemon or green apple. Very subtle character of oak is nicely blended. This is a well detailed white wine that pairs well with Sweet Miso Grilled Cod, Creamy Chicken or Camembert Cheese.
