The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. Ø VARIETY 100% Cabernet SauvignonØ REGION Margaret River Yallingup Sub-RegionØ COLOUR Deep garnet redØ OAK MATURATION 18 months in a selection of fine grained French oak barriques from specially chosen forests. 50% new oak; 30% 1 year old and 20% 2 year old barrels. The Malbec is barrel fermented in 500 litre puncheons.Ø AROMA Lifted red berry and cedarØ PALATE Elegant natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This outstanding Cabernet Sauvignon from Capel Vales Margaret River Scholar Vineyard demonstrates complexity and interest from maturation in French barriques and will go on to display subtle nuances and intrigue over time. A bright bouquet of cut grass and citrus blossom. This multi-layered blend is delicately fermented and matured in 100% new French oak. The palate is generous and fresh with a lively acidity.

Elegant and fragrant, this wine is all about vibrancy and fruit purity. Blackcurrant and herbal notes, bay leaf, violet florals and red-fruited freshness. It's layered and complex with a lovely mineral note running through, and oh-so-pure. Delightful drinking. Dry grown from our single vineyard organic plot in Yallingup. Hand harvest, foot & hand stomped into the terracotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the pots, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

Lifted herbal and minty notes with cassis and graphite. The palate is elegant and refined showing dark berries and a fine tannin structure. Aged in French oak for two years this wine offers excellent cellaring potential. A bigger wine than what you might expect from Margaret River. It's power is not without balance however, and those that prefer a rich red need look no further.Inky red purple. Blackberry, dark cherry, plum, earth and chocolatey oak. A fruit and oak bomb, rich and full-bodied, with a concentrated mix of dark berry fruit, firm tannins, intense flavour richness, crunchy acidity and mocha oak. A monster!

Concentrated and complex with cocoa, currant, cassis, bay leaf and dusty gravel. There is an underlying violet perfume, which is all wrapped up in savoury-cedar oak. Medium bodied with a long and seamless palate. There are ample fine grain tannins, which gently coat the mouth and will help to age the wine gracefully. Again, the palate shows a good balance between fruit and complex characters, with cassis, mulberry and currants well integrated with bay leaf, cocoa and dusty gravel. A concentrated and complex wine that will gain further complexity with age.
