Ring Bolt Cabernet Sauvignon
A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Fire Gully Reserve Cabernet Sauvignon
Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.
Hay Shed Hill Block 2 Cabernet Sauvignon
The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
