Speyside whisky distillery with a bold approach to the art of distillation and cask maturation. BenRiach 10-Year-Old is classic Speyside in character. The cask formula focuses on ex-bourbon and ex-sherry casks. A pleasant character, with green apple, tropical fruit, vanilla and toffee. A medium-long finish with chocolate and light oak.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

An inviting nose where barbeque smoke and cloves are intermingled with fresh notes of butterscotch and orange peel. On the pallet a fascinating blend of Applewood smoke, honey and all spice are married with stewed pears and fresh grilled pineapple. Pearse 5yr - Original - is a malt and grain whiskey blend, aged in former Bourbon and Kentuckey Bourbon Barrel Stout barrels for a minimum of 5 years.TASTING NOTESNose: this whiskey has a slightly citrus note with a rich vanilla aroma. It has mellow malt tones and an aroma of light honied fruits with floral undertones and a whisp of smoke.Palate: This whiskey has a smooth and easy palate with a hint of spearmint & light oak wood spice that builds to rounded semi-sweet chocolate, creamy vanilla and caramel taste. It has a mild malt character that is well balanced and finishes with a crisp smooth mouth feel.

Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.
