Starting with the recipe of our multi-award winning gin, Tasmanian Pepperberry is allowed to dominate the blend before maturing in shiraz barrels sourced from local Canberra region winemakers for around two months. The results are a remarkable uniqueness of each batch derived from the individual flavour qualities of each barrel. This is an absolute modern classic with a warm and delectable finish.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.

Six Dogs Blue derives its name from the Blue Pea flower (Clitoria Ternatea), an antioxidant and aphrodisiac in traditional medicine. As chance would have it, ‘Blue’ is also the name of the smallest dog in our pack of six. The infusion of Blue Pea gives the Gin its striking blue colour. The alchemy of this unusual botanical is further revealed when the Gin is mixed with a good tonic, changing the colour to light pink. Six Dogs Blue is the most royal of Gins. A party Gin. A touch of magic. A classic dry Gin with experiences of freshly cut lucerne over hand-picked and morning-harvested Rose Pelargonium. Each 500ml spirit lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box.
