Classic margs; rich and opulent meets a fine, persistent acid line (and length for days). Creamy and crisp, this is a wine in perfect balance. Mon Tout Heydays Chardonnay 2022 vintage comes with another change up this year with Mount Barker dictating even more of the style than the 2020 release, yet Heydays is still overtly, beautifully and enticingly Chardonnay. Delicate floral aromas of honeysuckle, apricot, and lemon zest. Flavours of stone fruit, lychee and pear combine in a silky and seamless manner. The fine, mineral acidity and oak tension adds restraint, texture and length.

No other variety allows the winemaker so much room to move in terms of flavour modification in the winery. In this wine we have used barrel fermentation in 25% new oak puncheons, juice MLF, wild yeast fermentation, yeast lees stirring and some solids inclusion in the ferment.

Bunkers Honeycombs Chardonnay is a white varietal which has a pale green colour.
