This striking, inky-purple Cabernet Sauvignon is a Coonawarra classic. It has intense aromas of blackcurrant, mint, and eucalyptus. It is full and ripe with layers of forest fruit and dark chocolate flavours. Great with aged steak and roast vegetables. Whats the importance of the number 570? Thats the number of vines that were first transported to our shores in 1832. They have been collected from Spain and France for the purpose of starting the first vineyards in Australia. Once the vines arrives, they were put into the care of a studious botanist we have nicknamed The Tutor. We were inspired by his story and this wine series pays homage to his careful observation and documentation. Cheers to 'The Tutor'.

The wine shows blackcurrant, cherries, lavender and violet aromas along with varietal, brambly earthy herbaceous characters.On the palate the wine shows dark plum and cherry fruit, savoury cocoa and earthy spice and subtle woody herbs- bay and thyme. It is full flavoured with chewy yet fine tannins and a lingering finish. The fruit was fermented on skins for eight days before being pressed and transferred to barrel for 18 months maturation.

The Parker Coonawarra Estate Cabernet Sauvignon is made in a riper, more generous style to its peers, yet with enough restraint to display the distinct varietal and regional characteristics. Offerings of ripe blackberry and damson plums, wafts of warm earth, iodine, mint and black olives. The palate shows a lot of restraint and freshness, fuller bodied not big though with determined tannins. A solid performer not just a backup singer.

Elgins Crossing commemorates pioneering vigneron John Riddochs outward voyage to Australia aboard the sailing ship Lady Elgin in 1851. A classic Coonawarra red with beautiful fragrant blackcurrant, dark plum, bright cassis, earthy aromas and flavours, fine persistent silky tannins and underlying oak complexity. Hidden Ridge Cabernet Sauvignon is rich and smooth with aromas of dark cherry and blackcurrant that are balanced by cedar oak notes. These flavours are carried through to the palate leaving long tannins and a generous finish.
