The wine displays a complex aroma of lifted violets, red berries and mint with lovely cedary oak. The palate is brimming with rich plums, blackberries and subtle chocolate and earthy notes. The intense flavour is balanced by fine sandy tannins and spicy vanillin oak.

The wine has an aroma of rich blackcurrant, subtle star anise spice and a touch of eucalypt. French oak maturation is also evident with subtle aromas of cedar and chocolate. A wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar and spice are also evident. The tannins are fine and elegant a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.

The late Jim Barry was a pioneer of Australian table wine, graduating with the 17th diploma in winemaking in Australia. He went on to become the first qualified winemaker to work in the Clare Valley of South Australia and with his wife, Nancy, built a successful wine business, which has produced trophy-winning wines since its establishment in 1959. Today, the custodian of Jim Barry Wines is their second son Peter, who joined the family winery in 1977 and now works along side his own sons, Tom and Sam. The Barry family name is synonymous with the Clare wine region. The Barry family believe that great wine is made in the vineyard and as such, are committed to owning their own vineyards. This control allows them to develop outstanding fruit quality and flavour which are then retained during winemaking. Over the last 60 years the family has worked to establish a mosaic of sites - 17 vineyards covering 320 hectares in the Clare Valley and two vineyards covering 35 hectares in the Coonawarra. Each unique in soil profile, climate, aspect and elevation. Each year, the Jim Barry winemakers identify distinctive parcels of fruit the reflect the vineyard from which they are grown. This small-batch project allows the creation of unique, vintage-specific wines that highlight the best fruit from vineyards owned by the family. This Cabernet was sourced from older Cabernet vines at the Lodge Hill property and shows the hallmark earthy characteristics of Clare Cabernet with elegant, fine tannins and vibrant purple fruit flavours. Our pinnacle Cabernet Sauvignon is named in honour of Bill Taylor Senior, Taylors founder and visionary, whose ambition to craft wines that stand tall amongst the world's best continues to guide us today. The Taylor family were really inspired by the great wines of Bordeaux, particularly the long lived Cabernet Sauvignons. So with this in mind, Mitchell Taylor expressed a desire to his chief winemaker that Taylors craft an extraordinary wine that represented the utmost refinement of this noble grape and truly embodied his grandfather's original vision.

A blend of two Clare Valley vineyards and made in quite a cool and protracted vintage, the OR Cabernet displays all the classic flavours of tobacco leaf, spearmint, riper dark fruits, cassis and subtle French oak highlights in an engaging and persistent palate. Finely shaped tannins round out the experience. A wine drinking perfectly in its youth or one that will further cellaring over 15 plus years.

Malbec is used here to great effect, filling out the Cabernet and providing a fragrant, spicy lift. In the glass: Deep dark red.
