In 1940 a very special bottle of barrel-aged bourbon was brought on a wild turkey hunt. The name stuck and still signifies exceptional, aged bourbon today. Master Distiller Eddie Russell honours this tradition by ageing our bourbon longer - from five up to eight years - in number four 'alligator char' American oak barrels.

First released on the Australian market in 1989, Gentleman Jack is a premium brand from the Jack Daniel's distillery in Lynchburg, Tennessee. The formula is based on early trial work carried out by Jack Daniels himself and is bottled to celebrate his whiskey being awarded a top gold at the St. Louis fair in 1904. Gentleman Jack remains consistent with the original Jack Daniel's style, it does however, differ in being a 'single whiskey', not a combination of whiskies blended together. Unlike any other whiskey, Gentlemen Jack is also charcoal mellowed twice though maple wood, once before aging and once again after. The distillery describes this process in their own distinctive way: ' Jack knew what a single journey through the charcoal meant to his exceptional whiskey - how the coarsely ground maple charcoal mellowed out the harsh oils and impurities that threatened the smooth, warm character of the whiskey. Imagine what a second trip would do, he mused. And so, throughout his life, he experimented with charcoal mellowing his whiskey twice. The process proved so painstaking, he never crafted enough of his new whiskey to introduce it to the world. Happily, he saved the recipe. In 1988, we finally put our founder's formula into limited production, and Gentleman Jack became the first new whiskey from the Jack Daniel Distillery in more than 100 years. No, our folks in product development have never been known for speed. We think a good thing is worth waiting for and, in the case of Gentleman Jack, I think you'll agree, we were smart to wait and get it right.' Suffice to say, the result is a particularly smooth, satisfying and individual drink.

Late in the 18th century, Master Distiller Basil Hayden Sr. left his Maryland home for the greener pastures of Kentucky, bringing his family and reputation with him. Not yet privy to the old guard’s ‘rules’ of bourbon, legend has it that Basil set out to make a batch simply using the ingredients he had on hand, unaware of what the traditionalists might think of his mash. What resulted was a bourbon with a uniquely high-rye mashbill, combining the sweetness of corn with the spicy undertones of rye. The purists may have been displeased, but not the neighbours who tried it. Over 200 years later, the Noe family pays tribute to Basil’s masterful discovery with a high-rye, small batch bourbon that embodies the spirit of that very first recipe. Basil Hayden's Kentucky Red Wine Finish Bourbon is an ultra-premium special release from. A blend of the classic Basil Hayden high-rye mash bill and bourbon partially aged in Californian red wine casks, this special release is ripe with cherries & dried fruit, while also delivering characteristic bourbon flavours of vanilla and charred oak. Perfectly balanced, Basil Hayden Red Wine Cask Finish is layered & complex, yet approachable & inviting. A vibrant toasted brown with amber hues, on the nose aromas of dried fruit notes with cherry, vanilla and a hint of toasted oak. Maker's Mark 46 Kentucky Bourbon Whisky is one unique Bourbon. Starting with the original Maker's Mark whisky, the barrels are emptied of the golden spirit to make way for extra French Oak staves. The whisky is then returned to the barrel and then aged to taste. Jim Beam Devil's Cut is an extraordinary new bourbon experience. The expert distillers at Jim Beam have developed a process that pulls the rich whiskey trapped inside the barrels' wood after they have been emptied. They then hold this barrel-treated extract until it develops the proper balance, then blend it with 6 year old Bourbon and bottle at 90 proof (45% alc/vol). The resulting Bourbon is a robust, premium whiskey with rich deep colour, aroma and character.

Angels Envy Kentucky Straight Bourbon is finished in port wine casks for an award-winning spirit. Angels Envy is a Louisville-based craft distiller that produces small batch, finished whiskeys. Co-founded in 2011 by the late Master Distiller Lincoln Henderson and his son Wes Henderson, it began as a passion project that combined their familys deep-rooted passion for and knowledge of the industry with an innovative outlook on bourbon making and finishing. The key difference here is the bourbon is finished in port casks, imparting a depth of flavour that other bourbons just dont have. On the palate, notes of vanilla, ripe fruit, maple syrup, toast and bitter chocolate are present before it finishes with a clean and lingering sweetness and a hint of Madeira that slowly fades.

One of the few Tennessee Whiskies that is charcoal mellowed, which gives Jack Daniel's Whisky Old No7 its distinctive smooth and smoky flavours. Now an American icon it's also a favourite here in Australia. A true classic that's still made to this day using the original recipe.
