A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

A timeless style of malt whisky, Balcones 1 Texas Single Malt breathes new life into centuries of distilling tradition with classic techniques and ingredients adapted for New World tastes. Opening aromas bear hints of toffee and overripe fruits. On the palate, layers of toasted malt and honey give way to mellow notes of baked pears and apples. Tasting note: One of the highlights in the new-look range, this harkens back to some of the earliest Arrans which were mostly matured in Sherry casks. Ginger snaps, cinnamon and fruit'n'nut dark chocolate aromas follow with a lovely dried fruit aspect (figs, dates, apricots). Bold but balanced; drier in the mouth than the nose suggests with fresh dried fruit flavours, leaning towards apricots. Pepper, cinnamon and ginger bread spice up the medium long finish. Ledaig is a wonderfully distinguished single malt handcrafted on the Isle of Mull by the Tobermory Distillery. The only distillery on the island, Tobermory produces its only peated malt in this Ledaig 10 Year Old Single Malt. Sitting in the ancient vaults for 10 years and the use of superior oak wood casks, aromatic lochan water and the exclusively peat dried malted barley all go to producing a whisky of purity, power and vibrancy.
