A sophisticated chardonnay based on some exceptional fruit and the deft subtle hand of the winemaker. The Chardonnay is from low-yielding Gin Gin vines that are now over 20 years old. Painstakingly converted them to cane pruning (from the established spur pruning). The parcels were hand-harvested, foot stomped and naturally fermented in a mix of concrete egg (20%) and old barrels (80%). It only received a rough filtering to, keep the wine as close to the vineyard as possible. Fresh, crisp, organic Chardonnay.

This Madfish Sauvignon Blanc Semillon has alluring aromas of guava, nashi pear, citrus zest with a hint of white floral on the nose. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.
