The Chardonnay is from low-yielding Gin Gin vines that are now over 20 years old. Painstakingly converted them to cane pruning (from the established spur pruning). The parcels were hand-harvested, foot stomped and naturally fermented in a mix of concrete egg (20%) and old barrels (80%). It only received a rough filtering to, keep the wine as close to the vineyard as possible. Fresh, crisp, organic Chardonnay.

Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. Xanadu Fusion Chardonnay gives an elegant bouquet full of pears, grapefruit and gala apples with underlying hints of nougat and cashew. The palate is medium bodied displaying white fleshed stone fruits and zesty citrus flavours. The wine offers an almost crystalline minerality, complimented by a lovely creamy/marshmallow texture derived from lees stirring whilst in barrel. Taut and fresh, the bright fruit and crisp acidity combine to focus the wine perfectly to a lingering fruit finish.
