The Chardonnay is from low-yielding Gin Gin vines that are now over 20 years old. Painstakingly converted them to cane pruning (from the established spur pruning). The parcels were hand-harvested, foot stomped and naturally fermented in a mix of concrete egg (20%) and old barrels (80%). It only received a rough filtering to, keep the wine as close to the vineyard as possible. Fresh, crisp, organic Chardonnay.

Winemaking:Mostle machine harvested at night with some early morning handpicked fruit. Pressed into stainless steel tanks to settle, then racked to barrel while still hazy for wild ferment, allowing natural expression. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.

Xanadu Fusion Chardonnay gives an elegant bouquet full of pears, grapefruit and gala apples with underlying hints of nougat and cashew. The palate is medium bodied displaying white fleshed stone fruits and zesty citrus flavours. The wine offers an almost crystalline minerality, complimented by a lovely creamy/marshmallow texture derived from lees stirring whilst in barrel.
