Handpicked and chilled for 16 hours before whole bunch press. Gently pressed directly to old French oak. Slow ferment 10 -12 days and kept on full solids for the life of the wine. Post fermentation, barrels were stirred weekly for 8 weeks. 6 months on full solids before bottling in October.

Cool climate winemaking guru, Tim Knappstein, has really nailed this wine in the true Gris style its vibrant, intense, flavoursome and textural yet has a lightness of touch. The grapes used to craft The Katana Chardonnay were handpicked, chilled overnight, and whole bunch pressed. The juice was rough settled, and transferred to French oak barriques for fermentation. This process led to the creation of a pale straw coloured wine with golden yellow highlights along the edges. This wonderful Chardonnay presents a supple core of citrus blossom and white stone fruit characters, enhanced by mineral notes. The juicy palate contains flavours of bright fruits and French oak supported by crisp acidity, ending in a lively and captivating climax. This alluring white wine can be enjoyed within 5 years from vintage. Drink it with potato soup, roasted vegetable pizza, and chorizo and sweet potato risotto.

The 2018 Katana Chardonnay reveals a supple core of white stone fruit and citrus blossom overlaid with tempered edges of minerality. On the palate bright varietal fruit is guided to the finish with nuances of French oak and crisp acidity.

Shows fruit on the offensive, lifted, fresh passionfruit and thrusts of snowpea and combine with a mineral edge. An elegant palate of intense fruit tapers cleanly on the palate to a crisp, finely honed conclusion of piercing acidity.Enjoy while young and fresh.

The fruit is handpicked directly into a refrigerated container where it is cooled all day, then delivered to the historic Bleasdale cellars at dusk for whole bunch pressing in the cool of the evening. This delicate wine shows all the spice and perfume we expect from cool climate Pinot Gris. Nashi, ginger and rosewater perfume leads to a generous and textured palate with nutty complexity from the barrel ferment component. A satisfying yet moreish wine, textured and complex middle palate, with a hint of sweetness to complement spicy foods.
