Jericho Adelaide Hills Tempranillo is an early release, joven (young) style of Tempranillo. A soft extraction process followed by ageing in old french oak for only four months, preserved the soft and aromatic flavours, giving the wine a fresh, juicy and vibrant palate with soft tannins.

A delightfully pink sparkling wine, Yellow Tails Bubbles Rose; offers great quality, affordable bubbles that will bring an element of fun to your next celebration. Fresh and spritzy with flavours of red cherry, sweet spice and a hint of tropical fruits.

Ageing for a minimum of 24 months on lees adds complexity to the fresh citrus, red apple and spring blossom aromas. The palate is crisp with a lingering, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. Winemaking: Different parcels of fruit are all hand-picked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasts around 12 days and in 2012 only some parcels of wine were putthrough malo-lactic ferment to soften the acidity and add complexity. 100% Chardonnay from Lenswood, The wine is painstakingly made in the traditional method of Champagne. Aged on lees for up to five years before being disgorged using the ancient method of ‘disgorgement à la volée’ - with nerve! The wine is super rich and complex. Roasted pine nuts, toasty citrus and brioche with a very fine bead of bubbles.
