The case in point is this remarkable Sangiovese that is sourced from two northern vineyards in the Adelaide Hills and two different Sangiovese clones that blend big round berries with cherry driven fruit flavours and the smaller, more concentrated berries that give the wine an aniseed and blackcurrant accent. A wine with great texture and mouthfeel that has density while maintaining its lifted fruit aromas.

McLaren Vale and Shiraz - the perfect match. Steve Maglieri is the icon behind the Serafino name and his Shiraz is a typically wonderful full-flavoured and full-bodied red with the black and red fruits you can handle. Named after Alfred Pizzini's grandmother, this is a medium bodied Sangiovese - warm and humble just like its namesake. The Fish Cage Pinot Noir Shiraz is a blend of Tumbarumba Pinot Noir and Hunter Valley Shiraz. Pinot noir from the cool climate of Tumbarumba is fragrant with red cherries and spice, blended with the ripe blackberry and plum fruit of the Hunter Valley Shiraz. The resultant wine is a seamless blend of the two varieties which has both character and elegance. This wine is made with Pinot Noir fruit grown on some spectacular vineyard sites in the Yarra Valley, comprising predominantly MV6 clone, with some 114 and 115. Pacha Mama use minimal additives or fining and aim to let the fruit shine through rather than clobbering all over it with heavy oak use or commercial wine-making techniques. Flavours of sour cherry and wild strawberries carry on to the palate complexed by a savoury spice and intriguing earthiness that lingers long after the last mouthful.
