Returning to Australia with the winemaking bug, Sams style involves letting the varietal characteristics of the grapes shine through, by using natural/wild fermentation and malolactic fermentation, with minimal additions and no finings. Having a nice meal with friends and family is one of his favourite things, so he crafts the wines to be fun, drinkable and best enjoyed with food and good company. Grenache is Australias signature grape variety and were slightly obsessed with it. Utilising a range of premium vineyards across The Barossa and McLaren Vale regions of South Australia, Thistledown have crafted a wine that captures all that is good about Grenache. Aromatic, deceptively light but with beautiful wild fruit, and slurpy, supple tannins.

This wine is made with Pinot Noir fruit grown on some spectacular vineyard sites in the Yarra Valley, comprising predominantly MV6 clone, with some 114 and 115. Pacha Mama use minimal additives or fining and aim to let the fruit shine through rather than clobbering all over it with heavy oak use or commercial wine-making techniques. Flavours of sour cherry and wild strawberries carry on to the palate complexed by a savoury spice and intriguing earthiness that lingers long after the last mouthful.

Vibrant in colour the nose shows plum and berry fruit with spice pepper and well integrated oak. The palate has good fruit weight with attractive berry flavours and a fine tannin finish.
