Balanced and elegant tannins, nicely integrated oak, gives the wine balance and structure. Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. The Maker Shiraz exhibits ripe plum and dark cherry fruit with hints of spiced charred oak and dark chocolate. Aged in seasoned French oak barrels, and best served with grilled meats.

Once & Wells Chardonnay comes from grapes grown in both the warmer and cooler areas of the Margaret River region, mixing tropical and citrus characteristics to produce a distinctive and well-balanced wine. The Chardonnays nose is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, citrus, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. A touch of vanilla and spicy oak gives this Chardonnay a refined note.

The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. It was playing rugby in many of the world’s winemaking regions, travelling and working through New Zealand, France, Spain, Portugal, US, Italy, Coonawarra, McLaren Vale and Margaret River that sparked a further love of wine. He’s now settled in Margaret River where he has the 'opportunity to work on the land and create something that speaks of its place'.

From the near perfect 2018 vintage this wine is typical of the style that comes from Margaret River tropical fruit mineral layers, and crisp acidity.
