Pan seared lightly Panko crusted Fremantle sardines with rocket tomato and buffalo mozzarella salad drizzled with salsa verde. Crisp green salads. Winemakers Notes: The traditional Sauvignon Blanc-Semillon blends originated from the Graves region of Bordeaux in South-West France. The two grape varieties that make up this traditional white wine blend have found a more than suitable home in the Southern Hemisphere and in the Margaret River region. Margaret River SBS wines often display a powerfully aromatic expression of the style. Our 2021 Flying Fish Cove displays the lifted aromatics combined with a succulent and powerful palate that is so synonymous with these styles. In this vintage, we have combined the punchy and lifted aromatics of Karridale Sauvignon Blanc with the power and weight of Wilyabrup Semillon.

Light, aromatic, dry and ready to party, this is a win for those that take enjoyment in life. There's nuance, sure, but the crisp, vibrant minerality and refreshing tropical fruit that made Margies SBS so famous is on full display here. Have a sip, kick back and watch time fly by. It's always exciting when a big name winemaker steps outside their traditional region. To us, we see it as an indication that they've seen something, smelt something or felt something in that style, in that place. To hear that James Kalleske had chosen to produce an SBS from Margaret River was very exciting, albeit unsurprising - there's nowhere that it does it better in the country. Well, all we'll say is this, whatever James saw, smelt or felt, that brought him to venture as far as Margaret River to create this wine, we feel it too. And so will you - pop the top and get stuck in before it's all gone!
