The aromas centre around lemon, lime and fresh hay, and the palate is decidedly linear, based on a spine of acidity. This exceptional wine, at six years of age, is still at least five away from its optimum drinking window. 'Little or no colour change; the bouquet is distinctly aromatic, but still focused on primary fruit, not toast or honey; the palate is electrifying, drawing saliva from the mouth with its mix of unsweetened lemon juice/lemon zest and life-giving acidity, the DNA of great Semillon.10.9% alcohol.' Vat 47 from the Hunter Valley has a silky bouquet of melon stone fruit and creamy oak that is followed by a palate of extraordinary balance and length. An absolute classic and will only get better with some medium term ageing.

The 1908 block at the HVD Vineyard was hand-picked and basket pressed, with the juice cold settled for four days before fermentation began in stainless steel tanks. The fermenting juice was then transferred to French oak barriques, 30% of which were new. The wine is balanced between primary chardonnay fruit flavours and secondary flavours, derived from the minimal solids ferment and extended yeast lees contact, resulting in this wine's texture and mouthfeel. A wine of depth and intensity, grown on 70+ year old Hunter Valley Vines. Grown on the deep red volcanic soils from the hillside on Wynwood Estate and handpicked after an ideal growing season this is a Medium to Full Bodied Shiraz. The boquet is layered, displaying darker berry fruits, earth and French oak. The primary focus of the palate is fruit sweetness and natural acidity supported by fine tannins.

This outstanding premium wine is deep crimson in colour. Intense berry fruit aromas, with hints of delicate oak. The palate is medium bodied, with rich blackcurrant fruit flavours. The tannins are soft & silky smooth. It's drinking beautifully now, but will continue to improve in the bottle.

Managed by renowned white wine specialist Denis Dubourdieu, the estates sweet Sauternes wine is a fresh lively style with crystalline fruit purity underpinned racy acidity. A fully botrytised blend of Semillon with a minor component of Sauvignon Blanc, the grapes are picked over successive tries and gentle pressed, before undergoing vinification and maturation in one third new French oak barriques for 10 months.
