'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. The wine is gorgeously fruited and fragrant on the nose showing dark fruit richness with smoked game, vanilla, chocolate tart and cedar characters. The palate is concentrated and wonderfully weighted, delivering fabulous fruit intensity and stylish oak infusion, backed by fine chalky tannins, finishing superbly long and sturdy. By drawing fruit from a number of Barossa sub-regionseach with their own unique terroirthe Mentor captures the immense regional definition of a great Barossa red. Having worked closely with the growers over the years, they share Peter's belief in growing wine, not just grapes, and work with the winemaking team to keep yields low and produce a complex wine, with rich and firm dark fruit flavour.

Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
