Mount Horrocks Cabernet Sauvignon is the result of Stephanie Tooles expertise in finding the right balance between fruit richness and oak maturation. Beautifully marrying these two components has given birth to a poised, well-structured, and delicious wine that will keep you wanting more. The nose is a fragrant display of light herbs, fresh mint and red currant aromas with hints of cedar-like oak. The palate boasts of delightfully ripe tannins, and features red currant and other classic dark fruit flavours. This dark and inky Cabernet Sauvignon will definitely blow you away with its complexity, depth and vibrancy. It pairs very well with savoury beef, game meats and cheese.

This wine presents a deep garnet hue. Fragrances of cranberry, red currant, cassis and herbs leap out of the wine glass. The palate shows classic Cabernet elements. Ripe flavours of cherry, cranberry and cassis integrate with vanilla oak and cedar. Balanced by firm tannins, the wine leads to a persistent and mouth filling finale. This wine can be cellared for a period of 6 to 8 years.

Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. CABERNET SAUVIGNON has been produced in our vineyards with a reduced yield. It is distinguished with an intense ruby-red colour, soothing fruity aromas with an after-point of vanilla and gillyflower infused by oak during its ripening. The taste is firm with an expressed structure, followed by a soft and harmonious aftertaste.

2006 Patrick of Coonawarra Home Block Cabernet Sauvignon. The grapes were grown at the Toccaciu Coonawarra estate, and the wine was matured for 26 months in French and American oak; while I am not a fan of ProCork, this is a very attractive wine, which has cruised through six, rising seven, years, the cassis and cedar flavours supported by very fine but persistent tannins.
