This Wild Ferment Pinot Noir is both delicate in nature and also generous in flavour with fresh cherry and rhubarb characters supported by smooth and silky tannins.

New to the herd is our Premium Pinot that hails from the Adelaide Hills. Vibrant with dark cherry and hints of briar with a hint of spicy oak. The palate is poised, polished and precise with good complexity and concentration.

A complex array of melon fig and cashew aromas is followed by a typically elegant and subtle palate with beautifully integrated oak. Petaluma had set a benchmark in Australian Chardonnay.

Ageing for a minimum of 24 months on lees adds complexity to the fresh citrus, red apple and spring blossom aromas. The palate is crisp with a lingering, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. Winemaking: Different parcels of fruit are all hand-picked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasts around 12 days and in 2012 only some parcels of wine were putthrough malo-lactic ferment to soften the acidity and add complexity. Pinot Noir and Meunier give the Altair power and riper red fruit aromas, and citrus lift and finesse from the Chardonnay. The addition of multi-vintage reserve wines adds depth and complexity. The fine, creamy mousse complements the peach and citrus characters. Bottle fermented and aged before a low dosage is added to balance the texture and acidity of the wine. With a blend of 60% Pinot Noir and 40% Chardonnay, the bouquet offers delightful lifted aromas of strawberry, lemon citrus and underlying notes of biscotti. The palate is elegant and well integrated displaying intense strawberry, nectarine and cashew characters enhanced by partial malolactic fermentation and extended time on yeast lees. The natural acidity provides excellent structure and finesse, with a mouthwatering citrus and nougat finish.
