These traditional sparkling varieties of Chardonnay, Pinot Noir and Pinot Meunier are sourced from the cool climate Adelaide Hills, and are picked early to retain high natural acidity. Small batches of these low yielding grapes are gently pressed in stainless stell basket presses. Following primary and partial malolactic fermentation the inidividual parcels are bottled and inoculated with yeast and sugar to encourage secondary fermentation. The cuvee is fermented in the bottle to develop complexity for approximately four years. This is a dry style sparkling with minerality, a crisp acid backbone and layers of flowers, fruits and toasty savoury nuances.

Penfolds Yattarna Chardonnay displays an initial bouquet of slate and wet stone, with nuances of lightly roasted almonds. Subtle hints of citrus, shrouded by nectarine and nashi pear fruits. On the palate, a spiced multi-citrus compote with a very delicate acidity. Balanced and will develop exceptionally well with cellaring.

Paracombe Chardonnay is a pale straw hued wine displaying light green tints. The attractive bouquet exudes mesmerising scents of fig and lemon soufflé, with light suggestions of minerality. The palate is delicate and structured, brimming with fresh flavours of peach, melon and creamy apple. These beautiful characters are supported by natural acidity, culminating the wine in a long, balanced and stylish finale. This wonderful Chardonnay tastes marvellous with crab cakes, pizza margherita and bay scallop chowder.

The Adelaide Hills, particularly Woodside, is perfectly situated to produce quality Pinot Noir Rose. Carefully nurtured by the winemaking team, this wine is fresh and lively with lifted strawberry aromas. Serve chilled.

This latest release from Petaluma Croser is a non vintage sparkling wine. The classic blend of Pinot Noir and Chardonnay offers a delicate bouquet of fresh citrus and white peach with a light yeastiness on the nose. Persistence bubbles with a dry long finish.

Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

Penfolds Maxs Chardonnay is a tribute to former Chief Winemaker Max Schubert, a legend in Penfolds history. Pale straw in colour with green hues, this wine has a very nice textural and creamy palate with a soft line of acid fading ever so slowly to a distant palate horizon.
