Fermented 80% in stainless steel tanks and the rest in French oak barriques, Vinaceous Shakre Chardonnay has been designed to display the strengths of modern Margaret River Chardonnay. This wine of merit features a pale lemon colour and opens with bright and clean fruit aromas accompanied by subtle oak nuances. Juicy and structured on the palate, the wine offers a crisp and clean finish that lingers on. It's a casual, uncomplicated accompaniment to a variety of meals, especially mushrooms.
Amelia Park Chardonnay
It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity.
