Almost blood red, this is a Cabernet Sauvignon & Shiraz in motion, changing and shifting from red scents of currants and cranberries to the black fruits of plum compote and black cherries, before a touch of cedar, leafy herbs and powdery black spices freshen the finish. The wine has a coolness that belies its power. The expression is as restrained as it is muscular. Richly layered, the fruit completes the structure. Underneath theres an umami earthiness, like scents of camping in the woods. Impeccably balanced. Savour with a rosemary pepper beef rib roast with porcini jus.

Produced from 30 year old vines situated in the southern end of the Barossa Valley the Cameron Vale Cabernet shows pronounced mint and blackcurrant flavours. Cellar for 3 - 5 years.

Intriguing aromas of rose petals and a summer pudding of lifted red fruits, berries and a hit of cinnamon and Asian spice. The palate is opulent, with intense red berries balanced by soft velvety tannins and supple oak with great balance from the acid reknown in Barossa Grenache. 'The cold, wet 2011 vintage hit the Barossa Valley particularly hard, wiping out huge tracts of vineyards. Dandelion's blend, then, came as a delightful surprise a tender, juicy, seductive drop that made the bottle seem too small. It's a blend of grenache (85 per cent), shiraz (10 per cent) and mataro (aka mourvedre or monastrell). The back label hints at how winemaker Elena Brooks and the Dandelion crew saved the day, "handpicking selected bunches" (that is, avoiding the rotten ones) of the three varieties for co-fermentation and ultimate success. This blend is unbaked which highlights the natural fruity character of the wine. There's lots of spicy cherry notes with blackberry and plum. Serve with slow-roasted pork shoulder and lots of greens. 'The 2011 Torbreck Cuvée Juveniles Grenache Shiraz Mourvèdre ($28) from the Barossa Valley provides a fragrant and intense concentration of flavours to match the bibimbap. Deep garnet in colour, displaying a mixed array of wildberry and red licorice aromas. The palate is fresh and vibrant, juicy and rounded. A very modern styled Barossa Shiraz, which is delicious drinking now that will mature well for the medium term. A variety of fermentation techniques were utilized, but all involved extended skin contact ranging from 15 to 25 days. A cold soak period of up to 6 days occurred before a natural warming to start the fermentation. Upon completion the ferments were pressed to a mix of new and seasoned oak hogsheads, for malolactic fermentation and maturation.

Barossa vignerons used to call their vineyards 'gardens', such was the care they were (and still are) given! The Three Gardens a classic Rhone blend that draws on the complementary character of Shiraz, Mourvèdre and Grenache.
