A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The synergy between region and variety is on full display here with this powerful Margaret River Cabernet from Allegiance Wines, which will continue to soften in the cellar.Mid garnet with a brick hue. Clean and lifted ripe berry fruit with integrated oak giving depth and complexity. Ripe, youthful and plush with integrated charry oak, rich cassis fruit and silken tannins on the well-balanced and persistent finish.

This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.
