Christmas Gin pays homage to Eileen Donsky, who made white christmas slice for the family each year. Not only did Megan continue her Nanna's tradition, but this year, using the small copper still, has made a gin to accompany it. With juniper, myrrh gum, cranberries and 5 other ingredients from the slice recipe, this is summer christmas in a glass. Perfect with soda and ice for one, or in a punch with tonic or ginger ale and fruit garnish.

Distiller’s favourite, packs a punch at 58% ABV but has a strong flavour profile to match. Big juniper and spice at the front of the palate, progressing through cardamon, cinnamon and finishing with lemon myrtle and citrus notes. Very versatile, great with soda or tonic makes a banging martini or negroni.

Summer Citrus Gin is perfect for any Australian outdoor occasion with the infusion of lemon, limes, grapefruits, and oranges complemented with native botanicals of quandong (native plum) and dessert lime. This gives a refreshing burst of flavour that quenches the thirst while in the Australian summer heat.

Inspired by a 1930s recipe that Distiller and Spirit Architect, Odelia Potts, has adapted, the KXG Australian Classic Dry Gin is made by the single shot method and vapour distillation using ‘Miss Pottsy’, the 200 litre Still. The inaugural gin recipe is a mix of classic ‘London Dry’ gin botanicals like juniper, coriander seed and cardamom pods, with the addition of fresh Sydney organic lemons, as well as a local mix of Australian native myrtles.

Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. A seasonal gin based entirely on Australian native juniper as the juniper source and features exclusively Australian native ingredients, which is the only one of its kind. All other Australian gins are based on imported Macedonian/European juniper. Whether or not this is technically gin is debatable since they don’t contain the same species of juniper, but they won medals at the San Francisco World Spirits Competition and London World Spirits Competition. Pushing the boundaries with this one, very different taste to classic gin. Traditional juniper is juniperus communis, Australian native juniper is myoporum insulare, known by botanists as Australian native juniper although it is a different species.

Tiny Bear Distillery is a micro-distillery located in the outer Melbourne suburb of Knoxfield. Opening their doors in June of 2018, they released three signature gins as well as two liqueurs. Tiny Bear Distillery has an innovative approach to creating its products, driven by the creator’s Chemistry and Biology teaching background. They've swapped out the usual gin botanicals for currants, cranberries, apricots and orange to make this fruity number. Finished off with a subtle drop of spice and decadent almond, this gin will make a heavenly summer gin and tonic garnished with a generous chunk of orange.

A complex London Dry style yet versatile and great in any Gin based drink. With nine botanicals, this Dry Gin touches different parts of the palate and has a long finish. Great in a G&T or G&S, wonderful in gin based cocktails and superb in martinis and negronis.

Native Desert Lime is citrus forward with plenty of spice. With liquorice notes finishing with citrus, this popular gin makes a refreshing gin and tonic garnished with a slice of lime.

Contemporary style Gin that is sweet on the palate. The Quandong (wild peach) dominates the palate early then the Kakadu Plum provides a tart, citrus finish. Best enjoyed with soda or a light style tonic and garnished with a slice of Grapefruit.
