Our head distiller, John McCarthy, then takes this beer and puts it through a 'beer stripping' column, copper pot stills and finally rectification columns which concentrate and purify to create a clean, pure spirit. The unfiltered result is a beautifully smooth vodka, with natural sweetness from our locally-grown barley, and plenty of character from our hand-made copper pot still.
