Dr Onyx Tonic Wax Platinum Gin

Prohibition Liquor Co's Blood Orange Gin

The short season in Adelaide of blood oranges herald winter turning to spring. To celebrate, their blood oranges were sourced from a single orchard near Loxton, then peeled and distilled with the finest botanicals within days of picking. Cool nights and sweltering days, typical of the region, produce the perfect growing conditions. Juicy, loud, and playful – they are paired with Riverland lemons and mandarins for citrus contrast and depth. Strawberry gum, chamomile and cinnamon myrtle enhance the floral characteristics.

Four Pillars Green Apple & Rhubarb Gin

The starting point for this gin was the freshly pressed rhubarb juice from the gardens of our Distiller Series partner, Warner’s Distillery. And what better to complement rhubarb than delicious fresh apples grown in the Yarra Valley? The distilling team got to work, setting out to create a gin that balanced the freshness and acidity of the fruit, with warm sweetness and spice. And we decided to look a little left of field for some of our botanicals like cacao shell – a waste product from the chocolate-making process – and fig leaf which we “foraged” from the gardens of our Four Pillars team and other friends around Healesville. It was a great idea…until we had to collect thousands of leaves. The dry botanicals and spice went into the pot, with Pink Lady apples and lemons in the botanical basket, and then post-distillation, three very special liquids were added to blend with the gin. First up was the rhubarb juice from Warner’s which is all fresh and tangy. Then there is the apple juice which brings a hint of sweetness with plenty of acidity to boot. And finally, the apple cider spirit (or eau de vie if you’re fancy) which Assistant Distiller and former cider brewer, Alice, distilled, which adds depth and complexity as well as beautiful perfume aromatics. The final gin is all bright, crisp, fresh fruit balanced with richer winter spices and an endless depth of flavour.

Underground Spirits ad crecendum var flosferam native gin

Delving further into the abundance of native treasures at the Australian National Botanic Gardens, Ad Crescendum var Flosferam Native Gin continues our collaboration with the gardens. This gin is quintessentially Australian, representative of our native flora and highlighting the importance of conservation at the gardens. The nose is crisp and piney. A soft, bright and herbaceous beginning, with delicate floral notes across the tongue. Slight umami. Leads to rich and sweet bush honey notes to finish.

Prohibition Christmas Gin ( Release)

It all began in 2015 when two mates from Adelaide hatched a crazy plan to start a gin distillery. One had a history in the food & beverage industry, the other – a graphic designer – passionate about creating brands. From humble beginnings in an inner-suburbs back yard garage to becoming an Adelaide institution, the Prohibition brand soon became a success. Prohibition Christmas Gin is fast becoming a hallmark of Australian Yuletide traditions, and their 2022 vintage is no exception. As always, it is perfect served over ice, in a Christmas French 75, shaken with foam and citrus, or drizzled on Christmas pudding, custard, or ice cream for a festive epicurean dessert. The 2023 Christmas Gin is a delightfully bright & decadent expression of our most festive spirit. Lashings of figs from the Adelaide Hills are elevated with cherries & late harvest Chardonnay grapes.

Distillery Pink Gin

The name says it all: Pink. The inspiration for our Pink comes from the Sunshine Coasts vast fruit bowl, and in this case, fresh raspberries. These coastal raspberries are infused in 20 20 Distillerys East London Dry distilled using the finest botanicals. This gin has a sweet raspberry nose with a full juniper hit and light citrus notes on the back end.

Four Pillars Modern Australian Gin

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper, so next time you feel like a better Bloody Mary try one with Four Pillars Modern Australian Gin instead.
