This luscious limited, seasonal batch gin is in honour of Little Miss Yoko. Oriental Oomphess and seductress of Victorian-era Little Lon once inhabited the very house our distillery now resides in Would she have embraced this divine double distillate? This exquisitely balanced spirit ringing with tones of citrus and juniper, rounded off with a lychee fruit finish, and concocted specially in her honour? Honour all good, but if you want Little Miss Yoko, first you must pay. she might have said. Tartly. Little Miss Yoko hits you at first with vanilla, oak and baking spices and of course - Lychees. On second pass the fragrance of suppressed juniper and citrus tantalise the taste buds with a sweet lingering lychee fruit finish to round out the finish. Enjoy stirred down in a Martini, or in your favourite sour.

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. Jungle Gin's bright aromatics work wonderfully with a dry tonic garnished with a lime leaf, yet equally well in any citrus forward cocktail.

To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. Imbue distillerys inaugural gin - a smooth wheat-based spirit starring locally abundant, foraged botanicals from Melbournes fringe suburbs. Suburban is boldly spicy, with the unmistakable pine aroma of juniper and the nutty warmth of coriander. Sunflower seed oils carry the grassy fennel and ginger heat through a burst of lemon to a crisp finish. Garnish with cucumber in a g&t to enhance the prickly pears unique melon notes.

Packed with botanicals it is juniper forward with the crispness of fresh organic white grapefruit peel balanced against Australian cinnamon myrtle and native pepper berries results in a modern versatile gin great for any occasion. Tasting Note A Juniper forward punchy Australian Dry style gin. The dry citrus hit of coriander seeds is accentuated by organic white grapefruit peel, providing fresh zesty qualities of citrus with subtle hints of bitter lemon. Floral top notes of lavender, rose and orris root, with earthy undertones from angelica root presenting on the nose. The Australian native botanicals of sweet strawberry gum and hot pepper berry linger on the finish which is elongated by the nuttiness of roasted native wattle seed.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper, so next time you feel like a better Bloody Mary try one with Four Pillars Modern Australian Gin instead.

The Gold winning The West Winds Sabre weighs in at 40% ABV and presents a traditional British style gin led by an undercurrent of citrus with a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture without the need for artificial additions. Perfect as a classic G&T with lemon to release the intricacies of this uniquely styled gin.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime.
