This cool-climate Shiraz shows white pepper on the nose with dark fruit and blackberry characters. The palate is full and ripe with berry fruit flavour, tight acidity and fine grained tannins.

We are absolutely thrilled to bring to you the Chandon Vintage Brut Rosé, exclusive to Vintage Cellars! A beautiful blend, the pinot component adds lovely strawberry flavours to the creamy nutty characters of the chardonnay which are the hallmark of the house of Chandon. Rich salmon pink in colour, the nose delivers enticing aromas of freshly baked pastry and nougat along with spice notes and hints of cherry and ripe strawberry. The palate is dense and multi-layered with mouth-filling red berry flavours complemented by toasty characters. A beautifully structured mid-palate is supported by savoury spice and fine creamy notes. The inclusion of red pinot noir base wine in the blend provides great complexity, persistence and a sublime long, dry finish.

Hand picked low yielding vines producing a wine with increased intensity of aroma, flavour, texture and length. Hand picked and fermented with indigenous yeast and matured in French oak for two years..

The nose displays aromas of raspberry and herbs with an attractive earthiness. The palate shows red berries, pomegranate and some lovely forest floor characters. A fine tannin profile and bright natural acid lift provide great depth and structure to the plate. The beautiful acidity suggests this.

Approachable, generous and flavoursome with a silken elegance. Berry fruits come to the fore with gentle dried herb notes in the background. Medium bodied, the palate is finely structured with lovely soft lingering tannins which integrate perfectly with the soft supportive acid and plush fruit.

This 20ha vineyard was planted on red clay loam soil at Woori Yallock in 2001 by Lou Primavera, with whom Giant Steps has a long-standing grape-supply relationship. Pinot Noir (114, MV6 and G8V3 clones) grown here on the north and north east facing slopes at 230m is noted for its complex structure and pronounced perfume. The 114 and MV6 are fermented as whole bunches in open vats, while the G8V3 is destemmed, given a long cold-soak and fermented separately to enhance its aromatic contribution. All ferments use indigenous yeasts and the whole-bunch components are periodically foot-stomped to release additional juice. The wines are pressed to 228 litre, French barriques (about 8% new) for 11 months before blending and bottling without fining or filtration.

One of the most exciting discoveries we made from a trip to New Zealand last year. Coal Pit is located in the Gibbston Valley sub region of Central Otago. Perfumed with violets, the nose is lifted and aromatic. Vibrant mid palate of black doris plum, wild herb, coffee and cassis backed by silky tannins and well integrated spicy oak. This is a newer world style of Chardonnay showing the elegance of fresh cool climate. Once harvested, the fruit was whole bunch pressed with the un-clarified juice that was fermented with inoculated yeast in seasoned French Oak Barriques. The wine by Paringa Estate was barrel stirred fortnightly during the eleven months of maturation and was sulphured early to retain fruit freshness & prevent malolactic fermentation. The bouquet of this wine is a mix nectarine, citrus/orange and complex sulphide solids aromas. The palate has similar fresh citrus & nectarine fruit flavours along with fine acidity. Chardonnay fruit combined with the complexity of barrel fermentation & maturation.
